Roasted plum pork
with pears

- 2 tablespoons olive oil
- 20g butter, melted
- 3 cloves garlic, crushed
- 2 large parsnips, halved, quartered lengthways
- 2 red onions, cut into thick wedges
- 700g pork fillet, trimmed
- 2 corella pears, quartered, core removed
- 6 sprigs fresh thyme
- ¾ cup plum sauce
- 2 tablespoons lemon juice
- 1. Preheat oven to 200°C/180°C fan-forced.
- 2. Combine the oil, butter and garlic in a small bowl. Season with salt and pepper. Place the parsnip and onion in a large baking dish. Add half the oil mixture. Toss to combine. Roast vegetables for 20 minutes.
- 3. Meanwhile, heat the remaining oil mixture in a large frying pan over high heat. Cook the pork, turning, for 5 minutes or until browned all over.
- 4. Add the pork, pears and half the thyme to the baking dish. Drizzle with combined plum sauce and lemon juice. Roast for 20-25 minutes or until the pork is cooked though and vegetables are tender. Serve sprinkled with remaining thyme.
